食品加工与保藏实验是食品科学与工程专业的必修课程之一,是一门独立开设的重要实践教学课程。为培养具有实践能力的应用型人才,提高实践教学质量,该文分析了食品加工与保藏实验教学中存在的问题,从实验教学内容、考核方式等方面提出了教学改革的对策建议,以促进食品加工与保藏实验教学的进一步发展。

The experiment of food processing and preservation is one of the compulsory courses for food science and engineering,it is also an important practical course. This essay pointed out problems in traditional physical experi?ment teaching,and put forward some suggestions for teaching reform in experiment contents and examination meth?ods,which is to cultivate the practical ability of the application of strong talents,and to improve the teaching quality, and to promote further development of the teaching in food processing and preservation experiment.
