戊聚糖是小麦制粉和食品加工品质中重要的影响因子之一。研究测定了我国北方地区32个冬小麦品种(系)籽粒中的戊聚糖和蛋白质、千粒重等性状,结果表明,不同品种(系)戊聚糖含量的变幅为3.92%~7.11%,戊聚糖与蛋白质含量的相关系数为0.681,达到极显著水平,蛋白质含量还与粒宽、千粒重呈显著正相关。
戊聚糖是小麥製粉和食品加工品質中重要的影響因子之一。研究測定瞭我國北方地區32箇鼕小麥品種(繫)籽粒中的戊聚糖和蛋白質、韆粒重等性狀,結果錶明,不同品種(繫)戊聚糖含量的變幅為3.92%~7.11%,戊聚糖與蛋白質含量的相關繫數為0.681,達到極顯著水平,蛋白質含量還與粒寬、韆粒重呈顯著正相關。
무취당시소맥제분화식품가공품질중중요적영향인자지일。연구측정료아국북방지구32개동소맥품충(계)자립중적무취당화단백질、천립중등성상,결과표명,불동품충(계)무취당함량적변폭위3.92%~7.11%,무취당여단백질함량적상관계수위0.681,체도겁현저수평,단백질함량환여립관、천립중정현저정상관。
Wheat pentosan is one important factor affecting the flour processing and food quality. The contents of pen?tosan,protein,1000-kernel weight were investigated on 32 winter wheat varieties/accessions which were planted in north China. Results showed that the contents of pentosan varied from 3.92%to 7.11%,and the contents of protein were positively related significant(r=0.681),the contents of protein with 1000-kernel weight and kernel width was positively related significantly .
