运用定性分析和定量分析相结合的研究方法,对南京市主城区餐饮集中地462位消费者进行街头随访问卷调研,就受访者外出就餐的消费习惯、对餐厨垃圾分类的认知度、对餐馆餐厨垃圾处理方式的期望等信息进行收集。通过对收集的数据进行整理、统计和分析,找出消费者行为与餐馆餐厨垃圾产生数量之间的相互作用关系,并结合目前南京市餐馆餐厨垃圾管理现状,给出基于消费者行为的餐馆餐厨垃圾减量管理的建议。

Using the research method with qualitative analysis and quantitative analysis, about 462 consumers in the catering concentrated areas of Nanjing were selected to carry out the questionnaire inquiry. The information about consumption habits of dining out, recognition of kitchen waste classification and expectation of kitchen waste treatment method was collected. By reorganizing, counting and analyzing the collected data, the interaction between consumer behavior and kitchen waste output in restaurants was found out. According to the management status of kitchen waste in Nanjing, some suggestions for reduction management of kitchen waste in restaurants based on consumer behavior were put forward.
