In the postharvest storage of fruits and vegetables,a large amount of active oxygen is produced due to the decreased function of active oxygen system.This results in the oxidative damage and senescence of fruits and vegetables.Exogenous active oxygen scavenger can delay the process in the senescence,browning and membrane lipid peroxidation of fruits and vegetables.This paper analyzes the relationship between reactive oxygen species and fruit ripening and senescence.It also discusses the control of exogenous active oxygen scav-enger on the senescence of fruits and vegetables.The paper aims to explore the mechanism of reative oxygen species on the senescence of fruits and vegetables.
