通过对食品安全控制过程中过敏原反应特质及防御手段的概述,并结合CAC、欧盟、美国、日本、澳大利亚和新西兰等国家(地区)有关过敏原标签的部分法律法规现状,比较了其中的异同点并将之与我国食品中过敏原的标识管理现状进行了对比.结合我国市场食品标签调查发现,现阶段我国食品标签中致敏原标识存在食品中过敏原标识法律法规、标准不够完善,过敏原的风险评估工作甚少等诸多不足之处,,并就过敏原标签的标识提出了相关的建议,对具体食品生产企业的管理实践有一定的指导意义.

In this study, we summarize the characteristics and control means of allergen issues in food safety, combined with the legal status of regulations concerning allergen labeling in Codex Alimentarius Commission (CAC), the European Union, the United States, Japan, Australia and New Zealand, et al., we made the comparison of their similarities and differences, and compared with the management status of food allergen identification in China. The results show that at present many deficiencies presented in the food allergen labeling in China, the food allergen labeling laws, regulations and the standard are inadequate, allergy risk assessments are also scarce. Based on the results, we made some suggestions on the allergen labeling, which may provide certain guiding to the actual production practice of specific enterprises.
