糖胺聚糖( GAGs)是鸡蛋壳有机组分中的重要组成部分,参与形成蛋壳的超微结构,进而调控蛋壳品质,其分泌贯穿蛋壳形成的全过程. 本文从GAGs的种类和生物活性、在蛋壳中的分布和对蛋壳超微结构的作用,及蛋壳中GAGs的调控等方面,简述了GAGs影响蛋壳品质的研究进展,以期为蛋壳品质的研究提供新思路.
糖胺聚糖( GAGs)是鷄蛋殼有機組分中的重要組成部分,參與形成蛋殼的超微結構,進而調控蛋殼品質,其分泌貫穿蛋殼形成的全過程. 本文從GAGs的種類和生物活性、在蛋殼中的分佈和對蛋殼超微結構的作用,及蛋殼中GAGs的調控等方麵,簡述瞭GAGs影響蛋殼品質的研究進展,以期為蛋殼品質的研究提供新思路.

Glycosaminoglycans ( GAGs) are one of the important constitute of eggshell organic matrix, which is involved in the formation of eggshell ultrastructure, and consequently affects eggshell quality. GAGs are syn-thesized and secreted in the process of eggshell formation. In the paper the GAGs families and their bioactivi-ties, distributions and effects of GAGs on eggshell ultrastructure, and modulation of GAGs in eggshell were presented, meanwhile, research progress on the effects of GAGs on regulation of eggshell quality was reviewed with the aim of providing a new idea for eggshell quality improvement.
