以生产马铃薯浓缩汁的下脚料粉渣为原料,采用化学法中的碱提取法来提取粉渣中水不溶性膳食纤维。通过响应曲面来优化粉渣水不溶性膳食纤维的提取工艺,研究出提取工艺的条件为:提取时间31.92 min、料液比1:20.14( g/mL)、提取温度60.54℃,在此条件下,不溶性膳食纤维得率为72.66%。

This thesis have a research on the powder residue concentration of potato , which adopts the chemical approach of Alkali extraction method to extract the water insoluble dietary fiber in the powder residue .We optimized the extraction process of powder residue insoluble dietary fiber by response surface method .And we drawed a conclusion that : the extraction time is 31.92 minutes, the ratio of liquid material is 1:20.14(g/ml), and the extraction temperature is 60. 54℃.On this condition, the insoluble dietary fiberˊs ratio is 72.66%.
