随着我国蜂业的发展,蜂蜜中兽药残留问题日益成为食品安全领域的重要内容,引起世界范围内的广泛关注。兽药残留不仅危害人体健康也对我国蜂蜜的出口带了严重的阻力。近年来国家质量监督检验检疫总局、农业部及卫生与计划生育委员会等对此加大重视程度。由于蜂蜜基质复杂,其中兽药残留含量较低,因此,发展快速、简易、高灵敏度、高通量的兽药检测技术成为了目前迫切的需要。本文结合蜂蜜中兽药残留的现状,对目前蜂蜜中兽药残留的不同检测方法(液相色谱-串联质谱法、免疫分析法、分子印迹法、毛细管电泳法等技术)进行了阐述,并对兽药残留检测技术在未来的发展方向进行了进一步展望。

ABSTRACT:With the development of apiculture, veterinary drug residues in honey have become a crucial is-sue in food quality and safety. Veterinary drug residues endanger the health of human being, and affect the ex-port of bee products. Recently, the General Administration of Quality Supervision, Inspection and Quarantine of China, Ministry of Agriculture of China, National Health and Family Planning Commission of China have paid more attention to the honey market. Because of the complexity of honey matrix and the trace amount of veterinary drug residues, therefore, it is necessary for the development of rapid, simple and easy, high sensitiv-ity, high throughput of veterinary drug detection technology. In the paper, combined with the situation of vete-rinary drug residues in honey, the different detection methods of these veterinary drug residues in recently year were reviewed, including liquid chromatography-tandem mass spectrometry, immunoassay method, molecular imprinting method and capillary electrophoresis. The future direction of the development of veterinary drug re-sidues detection technology was prospected.
