食品安全问题日益引起人们的关注,而常规的分析技术存在操作过程复杂、检测时间长、污染环境等缺点,因此迫切需要开发操作简便、检测时间短、可以实施现场检验的无损检测技术来完成食品质量安全检测。太赫兹光谱技术提供了一种新型的食品安全检测手段。本文简要概述了太赫兹波的特点,详细介绍了太赫兹辐射技术在食品安全领域的最新应用进展,并探讨了太赫兹光谱技术在食品安全领域应用存在的问题。

Theproblem of food safety has aroused people’s attention increasingly. The conventional analytical techniques have such disadvantages as complex operation process, long detection time and environmental pollution. Therefore, it is urgently needed to develop simple and time-saving methods that enable on-site nondestructive detection for food safety. Terahertz (THz) science and technology provides a new solution to the problem. In the present paper, a brief overview of the features of THz science and technology is given. In addition, the latest progress in the application of THz technology in food quality and safety detection is summarized. Problems encountered in its application in the ifeld of food safety are also discussed.
