通过一系列发酵、蒸馏、色谱分析试验,结果表明用粉碎的高粱配制发酵培养基,接入大曲,经过发酵蒸馏以后,再用气-质色谱联用仪、液相色谱仪综合分析蒸馏液的物质成分的方法,可以用来预判评价大曲用于生产后对所产基酒的色谱骨架香味成分的影响,而且简便易行、费用较少.
通過一繫列髮酵、蒸餾、色譜分析試驗,結果錶明用粉碎的高粱配製髮酵培養基,接入大麯,經過髮酵蒸餾以後,再用氣-質色譜聯用儀、液相色譜儀綜閤分析蒸餾液的物質成分的方法,可以用來預判評價大麯用于生產後對所產基酒的色譜骨架香味成分的影響,而且簡便易行、費用較少.

Throughing a series of fermentation, distillation, chromatographic analysis test, the result showed that the fermentation culture medium was prepared, using crushed sorghum access after fermentation distillation, Daqu, and gas chromatography mass spectrometry, liquid chromatography method for chromatograph comprehensive analysis of material composition of distillate, could be used to predict the effect of evaluation for Daqu chromatogram skeleton the aroma components of base liquor production, simple and convenient, cost lesser.
