将逆数值方法应用于物性测试,通过建立胡萝卜的内部水分扩散模型,把反映物料干燥过程动态特性的实验含水率曲线与物料颗粒内部的水分扩散相结合,确定胡萝卜在脱水过程中的对流传质系数。同时研究了厚度、半径、干燥温度和相对湿度对胡萝卜切片对流传质系数的影响。结果表明,对流传质系数不是一个常数。对流传质系数随厚度和干燥温度的增大而增大;随相对湿度的减小而减小;半径的增大对其无明显影响。

This paper has applied inverse nu-merical method to the estimation of physical prop-erty.By building an internal moisture diffusion model and selecting connective boundary condi-tions,the moisture diffusion inside the material has been organically combined with the drying ex-perimental curves to determine the mass transfer coefficient.At the same time,the impact of thick-ness,radius,drying temperature and relative hu-midity on the mass transfer coefficient of carrot section is studied. The results show the mass transfer is not a constant.The mass transfer coef-ficient had an increased trend followed by thickness and temperature,and decreased with the decrease of relative humidity;and there is no obvious effect from the increases of the radius.
