目的:通过在本市流通和餐饮环节监测食品,了解本市食品中卫生指标菌污染状况,为该市食源性疾病控制提供科学依据。方法采集该市流通和餐饮环节样品231份,对6类食品进行了菌落总数、大肠菌群、沙门氏菌、金黄色葡萄球菌、O157∶H7/N M、单核细胞增生李斯特氏菌、志贺氏菌、腊样芽孢杆菌检验分析。结果231份样品中合格72份,合格率为31.17%;231份样品中共检出28株致病菌,总检出率为12.12%。结论邯郸市食品卫生状况不容乐观,提醒食品流通和餐饮环节的监管,防止食源性疾病的爆发。

목적:통과재본시류통화찬음배절감측식품,료해본시식품중위생지표균오염상황,위해시식원성질병공제제공과학의거。방법채집해시류통화찬음배절양품231빈,대6류식품진행료균락총수、대장균군、사문씨균、금황색포도구균、O157∶H7/N M、단핵세포증생리사특씨균、지하씨균、석양아포간균검험분석。결과231빈양품중합격72빈,합격솔위31.17%;231빈양품중공검출28주치병균,총검출솔위12.12%。결론함단시식품위생상황불용악관,제성식품류통화찬음배절적감관,방지식원성질병적폭발。
Objective in the circulation and catering sectors monitoring food, understand the bacteria contamination in food hygiene index of the city, and provide scientific basis for the control of food borne disease. Methods to col ect the circulation and catering sectors 231 samples, 6 kinds of food for the colony count, coliform, Salmonel a, Staphylococcus aureus, O157:H7/NM, Listeria monocytogenes bacteria List S, Shigel a spp., Bacil us cereus strain analysis. Results 231 samples 72 samples qualified, qualified rate was 31.17%; 231 samples were detected in 28 strains, the total positive rate was 12.12%. Health food in Handan City conclusion is not optimistic, to remind the food circulation and catering sectors of the supervision, to prevent the outbreak of food borne disease.
